Jamaican Bush Tea

Certainly! Here’s a basic recipe for Jamaican bush tea, often referred to as “bush tea” or “bush tea bitters”:

### Jamaican Bush Tea Recipe:

#### Ingredients:
1. 2 cups of water
2. 1 tablespoon of dried Jamaican cerasee leaves (also known as Corilla or Bitter Melon leaves) – You can adjust the quantity based on preference.
3. 1 small piece of ginger (about 1-inch size), sliced or grated
4. Optional: honey or brown sugar to taste

#### Instructions:
1. **Prepare the Leaves**: Rinse the dried cerasee leaves under cold water to remove any dirt or debris. If using fresh leaves, wash them thoroughly.

2. **Boil the Water**: In a pot, bring the 2 cups of water to a boil.

3. **Add Ingredients**: Once the water is boiling, add the rinsed cerasee leaves and sliced or grated ginger.

4. **Simmer**: Reduce the heat to low and let the mixture simmer for about 10-15 minutes. This allows the flavors and nutrients from the leaves and ginger to infuse into the water.

5. **Strain**: After simmering, remove the pot from the heat and strain the liquid to remove the leaves and ginger pieces. You can use a fine mesh strainer or a tea infuser for this.

6. **Sweeten (Optional)**: If desired, add honey or brown sugar to taste while the tea is still warm. Stir well to dissolve.

7. **Serve**: Pour the strained tea into cups and enjoy your Jamaican bush tea!
